Stuffed Eggplant


This is a second dish, which can also be enjoyed as a main course.

A delicious way to eat vegetables which is simple to prepare.

Stuffed Aubergine/Eggplants

Ingredienti (Ingredients)



  • 4 melanzane - 4 aubergines/eggplants
  • 200 g di carne macinata - 200 g mince meat/ground beef
  • Pangrattato - Breadcrumbs
  • Formaggio parmigiano - Parmesan cheese
  • Olio d'oliva - Olive oil
  • 1 uovo - 1 egg
  • Salsa di pomodoro - Tomato sauce
  • Sale - Salt


Aubergines stuffed




  1. Lavate le melanzane e lasciate asciugare.
  2. Rimuovete la polpa e poi tagliatela a dadini piccoli.
  3. Mettete la polpa a rosolare nel soffritto (precedentemente preparato) insieme alla carne macinata (200 g di carne per 4 melanzane).
  4. Quando il composto è pronto, toglietelo dal fuoco e aggiungetevi un uovo intero, del pangrattato, del parmigiano, sale ed eventuali spezie.
  5. Mettete il ripieno all'interno delle melanzane, cospargetevi un filo d'olio e del pangrattato.
  6. Nella teglia, prima delle melanzane, mettete della salsa di pomodoro con un goccio d'olio e del sale, infornate le melanzane a 180/200 gradi per circa un'ora.

  1. Wash the aubergine and leave them to dry.
  2. Remove the pulp and dice into small cubes.
  3. Fry the pulp with (previously prepared) soffritto together with the mince meat (200 g of meat for 4 aubergines).
  4. When the mixture is ready, remove from heat and add an whole egg, breadcrumbs, some Parmesan cheese, salt and spices to taste.
  5. Put the filling inside the aubergines, sprinkle a little olive oil and some breadcrumbs.
  6. Into a baking dish, before the aubergines, place the tomato sauce with a drop of oil and salt, bake the aubergines at 180 - 200 degrees for about an hour.
